Banana Cinnamon Biscuits - Rolled Cookies


Ingredients:

 
2 cups unbleached flour
2 cups whole-wheat flour
4 teaspoons baking powder
2 teaspoons cinnamon
2 ripe bananas, mashed
1/2 cup natural unsalted peanut butter
1/2 cup grated carrot
1 cup filtered water
 
1.) Preheat the oven to 325o
 
2.) Measure all of the dry ingredients into a mixing bowl and stir until combined.
 
3.) Combine the mashed bananas, grated carrot and water in a glass measuring cup and stir until it is smooth and creamy.
 
4.) Make a well in the center of the flour and slowly pour in the peanut butter mixture. Mix on medium speed with an electric mixture until all ingredients are blended together.
 
5.) Turn the dough out on to a lightly floured surface and knead until the dough is soft.  Roll the dough 1/4 inch thick and cut the biscuits into your desired shape. 
 
6.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes or until the biscuits are dry and firm to the touch.
 
7.)  Turn the oven off and leave the biscuits in for another 20-30 minutes.  Remove from the oven and cool them on a baking rack.  Store biscuits in an airtight container.
