Barbecued Chicken in a Biscuit - Rolled Cookies
Ingredients:
2 cups unbleached flour
2 cups rolled oats
4 teaspoons baking powder
2 chicken breasts cut into thick slices
4 teaspoons virgin olive oil
4 tablespoons barbecue sauce
1 cup organic free-range chicken broth
1/2 cup canola oil
1.) Preheat the oven to 325o F
2.) Measure all of the dry ingredients into a mixing bowl and stir until combined.
3.) Heat a medium size frying pan on medium heat. Pour virgin olive oil in the pan and add the chicken. When cooked remove the chicken and mix in a bowl with the barbecue sauce. Allow to completely cool..jpg)

4.) Pour the chicken broth into the frying pan and scrape up all the remaining bits. Put liquid into a glass measuring cup. Add the canola oil. Place the chicken in a food processor and coarsely chop the chicken and add it to the broth and stir.
5.) Make a well in the center of the flour and add the chicken mixture. Mix all ingredients on medium speed with an electric mixture until combined.
6.) Turn the dough out on to a lightly floured surface and knead until the dough is soft. Roll the dough 1/4 inch thick and cut the biscuits into your desired shape.
7.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes.
8.) Remove the biscuits from the oven and baste with the remaining barbecue sauce. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container. Keep refrigerated and use all biscuits within one week.
