BBQ Beef Biscotti - Doggie Biscotti
Ingredients:
2 tablespoons virgin olive oil
6 cloves garlic, minced
1/2 pound beef stew meat
4 tablespoons prepared barbecue sauce
4 cups pastry flour or unbleached flour
4 teaspoons baking powder
1/2 cup canola oil
1/2 cup natural beef broth
1.) Preheat oven to 325o F.
2.) In a small skillet saute the olive oil and garlic. Add the beef and cook until meat is well browned on all sides. Remove from the pan and toss in a bowl with the barbecue sauce. Chop the stew meat into small pieces and set aside.
3.) Measure the beef, flour and baking powder into a mixing bowl. Stir until combined.
4.) Make a well in the center of the flour and pour the canola oil in all at once. Mix on medium speed until crumbly. Add the beef broth and stir until just combined, and it forms a soft dough.
5.) Turn the dough out onto a lightly floured surface and shape into a flat disc. Place the disc on a parchment-lined cookie sheet. Using a rolling pin flatten the disc out to 1/2 inch thick.
6.) Bake 18-25 minutes or until the biscotti is dry and firm to the touch. Remove from the oven and cool slightly. Cut the dough into 1/4 inch strips using either a knife or a pizza cutter and then once again into 1/2 inch cubes. Separate the cubes and return the pan to the oven to bake for another 15-20 minutes.
7.) When done cool the biscotti on a baking rack, and then store in a cookie jar.
