Carob, Peanut Butter and Oatmeal Biscuits - Rolled Cookies
Ingredients:
4 cups rolled oats
1 cup oat flour
4 teaspoons baking powder
4 teaspoons cinnamon
4 tablespoons unsweetened carob powder
2 teaspoons pure vanilla
1 cup natural unsalted peanut butter
1/2 cup filtered water
1.) Preheat oven to 325o F.
2.) Measure all of the dry ingredients into a mixing bowl and stir until combined.
3.) Mix the peanut butter, vanilla and water in a glass measuring cup. Make a well in the center of the dry ingredients and add the peanut butter mixture. Mix on medium speed until thoroughly combined and a soft do

ugh forms. 4.) Turn the dough out on to a lightly floured surface and knead until the dough is soft. Roll the dough 1/4 inch thick and cut the biscuits with your cookie cutters.
5.) Place the biscuits on a parchment paper lined cookie sheet and bake for about 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container.
* To make these biscuits a little fancy, you can make a glaze to brush on the top after they have completely cooled. Use equal parts water and organic brown rice syrup and whisk until smooth. Lightly brush the tops of the biscuits.
