Cheese Sandwiches - Fancy Cookies
Ingredients:
4 cups pastry flour
4 teaspoons garlic powder
4 tablespoons Romano cheese, grated
4 tablespoons canola oil
1/2 cup filtered water
4 tablespoons goat cheese, at room temperature
2 tablespoons crushed tomatoes
1.) Preheat oven to 325o F.
2.) Measure all the dry ingredients into a mixing bowl and whisk until blended together. Make a well in the center of the dry ingredients and add the canola oil. Mix on medium speed until all ingredients are totally combined together, and a soft dough forms.
3.) Turn the dough out onto a lightly floured surface and roll it 1/4 inch thick. Cut an even number of 1 inch biscuits. Using a mini cookie cutter, cut a window in half of the biscuits. (leftover dough can be used to form another biscuit.)
4.) Place the biscuits on a parchment paper lined cookie sheet and bake for for about 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes. Remove from the oven and cool them on a baking rack. Store biscuits in an airtight container until ready to fill.
5.) Use a fork to combine the soft goat cheese and tomatoes. Spread a thin layer over the plain biscuits and top with a biscuit that has a window.
