Chicken Cacciatore


Ingredients:

 

 
6 chicken thighs, skin removed
4 tablespoons unbleached flour
2 tablespoons virgin olive oil
4 cloves garlic, sliced into chunks
2 carrots, peeled and chopped finely
1/2 cup crushed tomatoes
4 tablespoons organic chicken broth
 
1.) Rinse the chicken, pat dry.  Spread the flour on a piece of waxed paper.  Coat the thighs.
 
2.) Heat the oil in a pan over medium heat.  Cook chicken until browned.  Remove to a plate.
 
3.) Add garlic and carrots to the pan.  Cook until carrots are soft.  Add the crushed tomatoes and chicken broth.  Place the chicken back in the pan, lower the heat and simmer covered for 20 minutes, stirring occasionally.
 
4.)  When chicken is cool, tear into bite-sized pieces, mix with the tomatoe mixture and serve over dry kibbles.
