Chicken Stroganoff


Ingredients: 

 
2 organic chicken breasts, cut up
2 tablespoons unbleached flour
2 tablespoons virgin olive oil
4 cloves garlic, sliced
1 cup frozen chopped broccoli, thawed
1/2 cup organic chicken broth plus 4 tablespoons
1 cup nonfat plain yogurt
 
1.) Rinse the chicken, pat dry.  Spread the flour on a piece of waxed paper.  Coat the chicken.
 
2.) Heat the oil in a pan over medium heat.  Cook chicken until browned.  Remove to a plate.
 
3.)Add the garlic and carrots to the pan and saute for 2 minutes, stirring with a wooden spoon.  Return the chicken to the pan and add the nonfat yogurt.
 
4.) Lower the heat and simmer covered for 20 minutes, stirring occasionally.
 
5.)  When chicken is cool, tear into bite-sized pieces, mix with the yogurt mixture and serve over dry kibbles.
