Coconut Granola Bars - Fancy Cookies


Ingredients:

 
5 cups old-fashioned rolled oats
1 cup sweetened flaked coconut
2 teaspoons cinnamon
4 teaspoons flax-seed
1 cup natural unsalted, crunchy peanut butter
1 cup brown rice syrup
 
1.) Preheat oven to 350o F.
 
2.) Measure all the dry ingredients into a mixing bowl and whisk until blended together.
 
3.) Combine the peanut butter and brown rice syrup in a measuring glass and stir with a fork until smooth and creamy
 
4.)  Mix the oats and the peanut butter mixture on medium speed.  The mixture will be sticky.
 
5.)  Using a piece of parchment paper, press the oat mixture onto a parchment-lined jelly roll pan.  Bake 12-15 minutes until golden and crispy.  Allow to cool before using a knife to cut into small bars.
