Fried Rice and Eggs
Ingredients:
2/3 cup, plus 2 tablespoons organic chicken broth
2 organic eggs, beaten
4 teaspoons virgin olive oil
2 cloves garlic, minced
4 tablespoons cooked rice
2 tablespoons chopped chicken or beef
1.) In a pan heat 2/3 cup chicken broth to a low boil.
2.) Beat the egg with a fork in a glass measuring cup, pour the egg mixture all at once into the boiling chicken broth, stirring the eggs around with the fork as they make contact with the broth. Stir until the egg is fully cooked.
Set aside.
3.) Heat the olive oil in a small pan over high heat, add the garlic, rice and meat stirring with a wooden spoon.
4.) Cook until the rice is crunchy and nicely browned. Remove from heat.
5.) Add the rice mixture to the egg soup and stir to combine. Add the remaining broth to cool it down. Eat plain or pour over top of your dog's dry kibbles.
