Pasta Crunchies
Ingredients:
1 1/2 cups penne pasta
2 tablespoons virgin olive oil
4 tablespoons Romano cheese, grated
1.) Preheat oven to 350o F.
2.) Boil the pasta, and remove from the water one minute before the recommended cooking time. Drain it well.
3.) Toss the pasta in a bowl with the olive oil. Cut the penne into bite size pieces. Add the cheese and toss until coated.
4.) Spread on a parchment-lined cookie sheet. Bake for 20 minutes until dry and firm to the touch.
5.) After the pieces are cooled completely, store in a plastic bag at room temperature for up to one week.
