Roasted Beet Chips - Fancy Cookies


Ingredients: 

 
6 red beets
1/2 cup virgin olive oil
 
1.) Preheat oven to 350o F.
  
2.) Wash and peel the beets.  Slice them crosswise into very thin slices and place in a single layer on a parchment -lines cookie sheet.
 
3.)  Brush the slices with the olive oil.  Place them in the oven and bake for 3 minutes or until the beets are crisp and crunchy.
 
4.) Remove from the oven and cool the chips completely before storing in a resealable plastic bag.  (use withing 3 days)
