Sauteed Liver & Bacon Biscotti - Doggie Biscotti
Ingredients:
4 pieces bacon, nitrate free
6 ounces calf or beef liver
4 cloves garlic
4 tablespoons canola oil or bacon drippings
1/2 cup filtered water
4 cups pastry flour or unbleached flour
4 teaspoons baking powder
1.) Preheat oven to 325o F.
2.) Cook the bacon until brown and crunchy. Set aside to cool before crumbling it in a food processor.
3.) Add the liver to the bacon skillet and saute with the garlic, until the liver is no longer pink. Pulse the garlic and liver in a food processor, while slowly adding the canola oil/bacon drippings. Process until it forms a paste and then add the water until the mixture is smooth and creamy.
4.) Mix the dry ingredients and the bacon bits together. Make a well in the center of the flour and add the liver mixture. Mix on medium speed until everything is combined and a dough begins to form.
5.) Turn the dough out onto a lightly floured surface and shape into a flat disc. Place the disc on a parchment-lined cookie sheet. Using a rolling pin flatten the disc out to 1/2 inch thick.
6.) Bake 18-25 minutes or until dry and firm to the touch. Remove from the oven and cool slightly. Cut the dough into 1/4 inch strips and then once again into 1/2 inch cubes. Separate the cubes and then return the pan to the oven to bake for another 15-20 minutes.
7.) When done cool on a baking rack and then store in a cookie jar.
