Seven Layer Biscuits - Fancy Cookies
Ingredients:
4 cups pastry flour
4 teaspoons baking powder
4 teaspoons cinnamon
2 tablespoons unsweetened carob powder
1 cup natural unsalted peanut butter
1/2 cup filtered water
2 organic eggs, beaten with 2 teaspoons water
1.) Preheat oven to 325o F.
2.)Whisk all the dry ingredients together. Divide the flour mixture in half and add the carob powder to one half of the mixture. Set aside. This will be the dark layer.
3.) Combine the peanut butter and water in a glass measuring cup and stir until smooth and creamy. Make a well in the center of the white layer and add half of the peanut butter mixture. Mix on medium speed until combined. Remove the dough and cover it with a damp paper towel.
4.) Add the black layer to the bowl and pour in the remaining peanut butter mixture. Mix on medium speed.
5.) Turn each ball of dough onto a lightly floured surface and shape into flat discs. Flatten each disc to 1/4 inch thickness. Apply a thin coat of the egg mixture to the lack layer and place the white layer on top. Press them together and chill in the freezer for 10 minutes.
6.) Cut the dough in half lengthwise. Spread more egg white on top and layer again. Return the dough to the freezer for another 10 minutes. Slice the layers lengthwise into three even strips. Divide each strip into 1/4 inch slices.
7.) Bake 12-15 minutes. Turn the oven off and leave the biscuits in for another 20-30 minutes.
